1 Cut citrus fruit in half. Squeeze out the juice and place in a large pan. Tie pips in muslin and add to the juice. 2 Slice peel to required thickness add to pan 3 Add water to pan and bring to the boil simmer for 1 1/22 hours until peel is very soft 4 Remove pips. Add sugar and gently heat until dissolved 5 Bring to the boil and boil rapidly until setting point (see pageS9 ) is reached. Avoid any spillage 6 Allow to cool 7 Pour into prepared jars cover place and label Makes: 4.5kg approx Email this Recipe:
