1/2 cup orange juice
1/2 cup nonfat milk
2 x eggs, separated, at room temperature
1/2 tbl butter or margarine, melted
2 tsp fresh lemon juice
2 tsp grated orange zest
1/2 tsp grated lemon zest
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2/3 cup finely chopped pecans (optional)
Pinch of cream of tartar
3 tbl granulated sugar
Additional butter
Instructions:
Instructions: Whisk orange juice, milk, egg yolks, butter, lemon juice and grated zest in large bowl to blend.

Combine flour, baking powder, baking soda and salt in medium bowl. Mix dry ingredients into orange juice mixture. Stir in pecans, if using.

Beat egg whites and cream of tartar to soft peaks in another bowl. Add sugar and beat until whites are stiff but not dry.

Preheat waffle iron according to manufacturers instructions. Gently fold 1/4 of whites into batter to lighten, then fold in remaining whites. Working in batches, spoon some batter onto iron; spread with spatula. Cover and cook until waffles are golden brown and cooked through. Repeat with remaining batter. Serve with additional butter, maple syrup, lemon curd or orange marmalade. - Adapted
