1 med garlic clove
1 x bay leaf
1/4 tsp dried thyme
3 x celery ribs trimmed
and finely diced
1 lrg carrot finely diced
1 med yellow boiling potato such as
Yukon Gold or Yellow Finn peeled
and finely diced
salt
1 tsp freshly ground black pepper

Instructions: Legal Sea Foods Inc., a chain of restaurants and fish markets has been an institution in Boston for thirty years, and its chowders - fish and clam - have been a staple of the business; they were even served at several presidential inaugurations. 1. Combine the clams, fish broth, onion, garlic, bay leaf, and thyme in a heavy 4-quart saucepan over high heat. When the liquid boils, reduce the heat to medium-low, cover, and simmer for 10 minutes.

2. Add the celery, carrot, and potato and cook for about 30 minutes longer. Season with salt and pepper; stir in the parsley just before serving.
