Instructions: Heat the oven to 375 degrees. Grease a baking sheet.
Combine the sugar and shortening in a mixer. Add the eggs, vanilla and dissolved baking soda and beat until smooth. Combine the flour and salt and slowly add to the wet ingredients. Pulse raisins in a food processor until chopped fine. Using a wooden spoon, stir in the oatmeal, coconut and raisins. Flatten pieces of dough about the size of walnuts on the baking sheet, spaced 1 inch apart. Bake the cookies until theyre golden and crisp, 15 to 20 minutes. This recipe yields 48 cookies.
