Recipe for Classic Chicken and Rice Casserole

Ingredients:

Amount	Ingredient
	Vegetable cooking spray
1 tbl	Olive oil
1 lb	Chicken white meat, pieces
2 cup	Rice
1 med	Onion, chopped
1 med	Red bell pepper, chopped
1 med	Green bell pepper, chopped
1 x	Clove garlic, minced
1/2 tsp	Salt, optional
1/2 tsp	Basil
1/2 cup	Chicken stock
1 tbl	Lime juice
1/8 tsp	Ground saffron OR 1/2 teaspoon turmeric
1 x	Bay leaf
1 med	Tomato, chopped

Instructions:

Instructions: Spray rice cooker with vegetable non-stick spray. Add all ingredients except tomato and green peas. Stir. Cover and cook until rice cooker shuts off. Carefully remove cover. Fold in tomatoes and peas. Cover and allow to steam for 10 minutes.

Serves 8.
