raspberry or red wine vinegar |

Lightly spray a medium skillet and saut, about 3 minutes. onion over medium-high heat until soft |

Add mushrooms, reduce heat to medium, and continue cooking for 10 minutes, until mushrooms are softened. Add vinegar and cook until vinegar is well absorbed, about 1 minute. Season to taste with salt and pepper. |
Instructions:
Instructions: Sauted mushrooms and onion in a hot vinegar sauce are poured over the greens to wilt and warm them. Sprinkle liberally with fresh thyme or tarragon leaves for a flavor boost.
