1/2 cup chopped onion
1 cup sliced mushrooms
2 tbl raspberry or red wine vinegar
Salt and pepper
4 cup mixed greens of choice
Fantastic Raspberry Vinaigrette
Fresh thyme or tarragon leaves, (optional)
Cooking spray
1 x Lightly spray a medium skillet and saut, about 3 minutes. onion over medium-high heat until soft
2 x Add mushrooms, reduce heat to medium, and continue cooking for 10 minutes, until mushrooms are softened. Add vinegar and cook until vinegar is well absorbed, about 1 minute. Season to taste with salt and pepper.
Instructions:
Instructions: Sauted mushrooms and onion in a hot vinegar sauce are poured over the greens to wilt and warm them. Sprinkle liberally with fresh thyme or tarragon leaves for a flavor boost.
