Instructions: Butter each of the bread slices. Turn four, buttered side down, onto a cookie sheet lined with wax paper. Divide cheese and tomatoes among sandwiches, then drizzle with oil and season with salt. Top with remaining bread slices, making sure butter side is facing you.
If you have a sandwich grill, proceed to grill sandwiches according to manufacturers directions. If you are using a grill pan, heat it, then place a sandwich in it. Get another heavy pot or skillet (preferably cast iron) and place it on top of the sandwich to weigh it down. Cook sandwich until golden brown on one side, then remove weight and cook on the other side, until cheese has melted and the sandwich is crisp all over. 4 servings Email this Recipe:
