Instructions: Place potatoes in a colander and squeeze out as much liquid as possible.
In a large bowl, combine potatoes, onion, eggs, flour, salt and baking powder; mix well. Heat oil in a skillet over medium heat. Add batter in heaping tablespoons and flatten each to make a pancake. Fry until golden brown, about 3 minutes. Turn and cook other side; drain on paper towel. Serve with sour cream. This recipe yields 4 servings. Description: "Serve these delicious crisp pancakes for breakfast or dinner. Traditionally they are eaten with sour cream or applesauce to sweeten them, but try them with a roast and gravy too."
