Instructions: 1. Place the chicken in a bowl and pour over the sherry.
2. Place the stock and soy sauce in a saucepan and bring to the boil. 3. Add the chicken and sherry and simmer for 5 minutes. 4. Stir in the watercress and simmer for 5 minutes. 5. To make the croutons, cut the bread into 1 cm (1/2 inch) squares and fry in the oil until crisp and golden. Drain and serve with the soup. NOTES : A delicious quick and easy soup to prepare.
