Instructions: Serve as part of an Indian meal.
Peel and finely chop onion and ginger Top and tail green beans. Dry-fry dessicated coconut, stirring, until golden-brown. Heat oil in heavy saucepan. Fry onion and ginger gently for 5 minutes. Add in green beans. Stir-fry for 2 mins. Add in coconut, coriander, turmeric, water, salt and pepper. Cover and cook over low heat for 5-10 mins, stirring often, till beans cooked. Email this Recipe:
