2 cup milk
3 tbl cornstarch
1 cup Sugar
2 tbl butter or margarine
3 x eggs -- separated
1 lt tsp. vanilla extract
1 tsp coconut extract
1 tsp unflavored gelatin
1 pch salt
1 lt 3 1/2-oz. can shredded coconut
Instructions:
Instructions: Place milk in 4-cup glass measure. Microwave on High for 3 to 4 minutes.

Combine cornstarch and 1 cup sugar, Stir into hot milk, Microwave on Medium for 3 minutes; stir. Add butter, Microwave on Medium for 30 seconds longer; stir. Beat egg yolks. Add small amount of hot mixture to egg yolks; mix well. Add egg yolks to hot mixture slowly. Microwave on Medium for 2 to 3 minutes. Add vanilla and coconut extracts, Dissolve gelatin in small amount of water, Add to warm custard mixture; cool slightly. Beat egg whites until soft peaks form, Add 6 tablespoons sugar and salt gradually; beat until stiff peaks form. Fold egg whites and coconut into cooled custard mixture, Pour into baked pastry shell. Chill until firm.
