Instructions: Scrub potatoes thoroughly, and rub skins with oil; bake at 375 degrees F. for one hour or until tender. Let cool to touch. Slice skin away from top of each potato. Carefully scoop out pulp, leaving shells intact. Combine potato pulp, sugar, milk, range juice, and salt; beat with electric mixer until smooth. Stir in orange rind and 1/2 cup coconut. Spoon potato mixture into shells; sprinkle with remaining coconut. Bake at 350 degrees F. for 20 minutes or until thoroughly heated.
