2 tbl instant coffee granules
1 cup butter OR margarine, softened
1/3 cup sifted powdered sugar
2 tsp vanilla extract
2 cup all purpose flour
1 cup finely chopped pecans
Instructions:
Instructions: Crush coffee granules into a fine powder, using a mortar and pestle or back of a spoon, set coffee powder aside.

Beat butter at medium speed with an electric mixer until creamy; gradually add 1/3 cup powdered sugar, beating well. Add coffee powder, vanilla, flour, and pecans, mixing until blended. Cover and chill at least 1 hour.

Shape dough into 1 inch balls; place on ungreased cookie sheets.

Bake at 350 F. for 12 minutes or until lightly browned. Transfer to wire rack; cool 10 minutes. Roll in powdered sugar; cool completely on wire racks. Roll in powdered sugar again, if desired.

Yield: 3 1/2 dozen.
