Ingredients:

2 x thick slices of panettone (about 300g altogether) cut into large pieces
100 ml plus 1 tbsp marsala
200 ml strong coffee
2 x bananas thickly sliced
250 gm mascarpone
50 gm golden caster sugar
Instructions:
Instructions: Grated chocolate and toasted flaked almonds to serve

Place the panettone in a wide deep glass bowl and sprinkle over 100ml marsala and the coffee to soak in.

Top with the bananas.

Beat the mascarpone and sugar together and lightly fold in the cream and 1 tbsp marsala.

Spoon this over the bananas cover and chill.

ecorate with chocolate and almonds just before serving.

Instead of panettone you could use ponge cake sprinkled with chopped peel or dried fruit.
