2 tbl red-wine vinegar
2 tbl coarse-grained mustard
1 tbl bottled horseradish drained
Salt to taste
Freshly-ground black pepper to taste
1/4 cup olive oil
2 x scallions minced
1/4 cup minced watercress
1/2 cup mayonnaise
1/2 lb rare roast beef or leftover steak thinly sliced,
Instructions:
Instructions: In a small bowl whisk together the vinegar, mustard, horseradish and salt and pepper. Whisk in the oil until emulsified. Whisk in the scallions, watercress, and mayonnaise.

Arrange the beef on a platter and serve it with mustard sauce.
