Instructions: Put the apricots in a small glass bowl or short rimmed glass with the water. Cover with plastic wrap and microwave for 2 minutes on high power. Remove and let stand, covered for 10-15 minutes until the water is absorbed. Or, pour boiling water over the apricots, cover with plastic wrap, and let stand, covered, until tender. Combine the tofu, soy milk, and apricots in blender. Add the peaches and sorbet. Blend until smooth.
