200 ml cream fil or sour cream
1 x egg yolk
2 tsp prepared mustard
salt
white pepper
red wine
Instructions:
Instructions: Stir together the cream egg yolk and mustard.

Season to taste with salt pepper and if desired vinegar.

Serve with cold poached fish or fish salads.

Variation: Instead of mustard flavour the sauce with paprika curry powder or finely chopped dill chives or parsley.
