450 gm dried or fresh egg noodles
1 tbl sesame oil
sauce
3 tbl sesame paste or peanut butter
2 tsp chilli powder
1/2 tbl garlic finely chopped
2 tsp Chilli Oil
2 tbl light soy sauce
1 tsp salt
2 tsp sugar
Instructions:
Instructions: Cook the noodles by boiling them for 35 minutes in a pot of boiling water and then put them into cold water until you are ready to use them.

Mix the sauce ingredients together in a bowl or in an electric blender.

This can be done in advance and kept refrigerated as the sauce is meant to be cold.

Drain the cooked noodles and toss them with the sesame oil to make sure none of the noodles stick together.

Arrange the noodles on a platter or in a large bowl.

Pour the sauce over the top and sprinkle on the spring onions.

Toss the noodles well with the sauce before serving.

These savoury noodles are perfect for summertime and I enjoy making them because much of the work can be done ahead of time. Most people enjoy the fragrance of the sesame paste in this recipe but if you cant get it you can use peanut butter instead. Cold Spicy Noodles can be served with that a mixed grill.
