Ingredients:
Amount Ingredient
4 lrg Red tomatoes peeled, seeded,
and coarsely chopped
1 med Red bell pepper seeded, and
coarsely chopped
1 med Green bell pepper seeded, and
coarsely chopped
1 x Jalapeno minced
1/2 cup Chopped cilantro
1/4 cup Fresh lime juice
2 cup Canned tomato juice
1 med Cucumber peeled, seeded,
and diced
3 x Garlic cloves coarsely chopped
4 slc Good-quality white bread crusts left on
Salt to taste
Freshly-ground black pepper to taste
----------------- CRAB RELISH ----------------
1 lb Lump crab meat picked over
1 x Red bell pepper seeded, diced
1 x Green bell pepper seeded, diced
1 x Cucumber peeled, diced
2 tbl Finely-chopped cilantro
2 tbl Lime juice
Salt to taste
Instructions:
Instructions: Puree all soup ingredients until smooth. Season with salt and pepper to taste. Divide among bowls and garnish with a dollop of crab relish.

Crab Relish: Combine all ingredients in a bowl and season with salt and pepper to taste.

This recipe yields 4 servings.
