1 pkt frozen green peas (10 oz.) thawed
3 cup cooked rice
1 jar diced pimiento (4 oz.) drained
6 x green onions chopped
4 x hard-cooked eggs chopped
2 cup shredded cheddar cheese (8 oz.)
1/2 cup sliced pimiento stuffed olives optional
1/2 cup chopped celery
1/3 cup sweet pickle relish
1/2 cup mayonnaise or salad dressing
Lettuce leaves optional
Instructions:
Instructions: Combine first 9 ingredients; stir well. Add mayonnaise, tossing until well mixed. Cover and chill thoroughly. Serve on lettuce leaves and garnish with cherry tomatoes if desired.
