Combine all the ingredients in a bowl and whisk together. Set aside. Salad: Break the noodles. Cook in 4 cups boiling water for 2 minutes then drain. Rinse with cold water and drain thoroughly. Cook the asparagus or beans in boiling water for 2-3 minutes. Remove and rinse with cold water. Drain thoroughly. Combine the noodles, green vegetables, red pepper and spring onions in a serving bowl. Pour the dressing over the salad. Top with the coriander or parsley and nuts, and serve immediately.
