2 tbl oil
2 tbl lemon juice
1 x flavour sachet from MAGGI 2 Minute, Fried Onion Flavour Noodles
1 tsp grated fresh root ginger
1 tsp sesame oil
1 tsp fish sauce, (optional)
----------------- SALAD ----------------
1 pkt MAGGI 2 Minute Noodles, Fried Onion Flavour
100 gm asparagus or green beans
100 gm snow peas or broccoli florets
1 x red pepper, sliced
2 x spring onions, sliced diagonally
1/4 cup fresh coriander leaves or parsley sprigs

Instructions: Dressing:
Combine all the ingredients in a bowl and whisk together. Set aside.

Salad:
Break the noodles.

Cook in 4 cups boiling water for 2 minutes then drain.

Rinse with cold water and drain thoroughly.

Cook the asparagus or beans in boiling water for 2-3 minutes.

Remove and rinse with cold water. Drain thoroughly.

Combine the noodles, green vegetables, red pepper and spring onions in a serving bowl.

Pour the dressing over the salad.

Top with the coriander or parsley and nuts, and serve immediately.
