Instructions: Add 3 tablespoons of melted butter to a 10 inch cast-iron or heavy ovenproof skillet. Arrange a single layer of potato slices, slightly overlapping, in a circular pattern in the skillet. Sprinkle with salt and pepper.
Drizzle a little more melted butter over the potatoes. Repeat the layer 5 times, ending with drizzled butter. Press down firmly to pack. Cover and bake for 20 minutes at 450 degrees. Uncover and bake another 25 minutes until potatoes are golden. Place a 10- or 12 inch plate upside down on top of the pan and flip the pancake onto the plate. Email this Recipe:
