1/2 cup white wine, such as Sauvignon Blanc or Chenin Blanc
1/2 cup water
1/2 cup sugar
1 x piece vanilla bean, about 6 inches long, slit open
6 x peaches, peeled, halved and pitted
Instructions:
Instructions: Combine the wine, water, sugar and vanilla bean in a saucepan and bring to a boil, stirring to dissolve the sugar. Boil for about 5 minutes, until a light syrup forms.

Reduce the heat and slip the peach halves into the pan. Poach the fruit for 5 minutes, then turn off the heat. Let stand for 1 hour before serving. Or, the peaches may be refrigerated and served cold. Theyll keep in the refrigerator in their syrup for several days.

To serve, place 2 peach halves in a bowl along with a little syrup and a spoonful of creme fraiche.

Serves 6.
