Instructions: Spray a medium saucepan with non-stick spray. Add onions, garlic, and mushrooms. Cook and stir over medium heat until vegetables are tender, about 5 minutes.
Add tomato, oregano, and cumin. Cook for 1 more minute. Stir in broth and crushed red pepper flakes. BRing to a boil. Stir in couscous and parsley. Remove from heat. Cover and let stand for 5 minutes. Fluff with a fork before serving. Email this Recipe:
