6 doz mussels - (abt 5 lbs)
1 x carrot grated coarsely
1/3 cup mayonnaise
1 x cucumber peeled, seeded,
and diced
1/3 cup sour cream
1 tbl chopped fresh dill
(or 1 tspn dried dill)
1 tbl lemon juice
1/2 x sweet red pepper
1/2 tsp Dijon mustard
10 x black olives sliced
Salt to taste
Freshly-ground black pepper to taste
Instructions:
Instructions: Clean mussels, remove beard, and steam using the simple "Basic Steamed Mussels" recipe. When cool enough to handle, remove mussels from their shells and chill in the refrigerator.

Combine mayonnaise, sour cream, lemon juice, mustard, carrot, cucumber, dill, red pepper, olives and egg (optional) in a large bowl. Cover bowl and refrigerate.

When mussels are cool, add them to the salad mixture and chill. Serve as salad or main course.

This recipe yields 4 to 6 servings.
