Instructions: Clean mussels, remove beard, and steam using the simple "Basic Steamed Mussels" recipe. When cool enough to handle, remove mussels from their shells and chill in the refrigerator.
Combine mayonnaise, sour cream, lemon juice, mustard, carrot, cucumber, dill, red pepper, olives and egg (optional) in a large bowl. Cover bowl and refrigerate. When mussels are cool, add them to the salad mixture and chill. Serve as salad or main course. This recipe yields 4 to 6 servings. Email this Recipe:
