2 lb Fat-free raccoon meat ground
1/2 cup Cracker crumbs
1/2 cup Ground onion
1/3 tsp Salt
1/2 tsp Freshly-ground black pepper
2 x Eggs lightly beaten
1/4 tsp Ground thyme
Instructions:
Instructions: Mix all together well and form into a loaf; place in a greased loaf pan. Set loaf pan in another pan of hot water, and bake at 350 degrees for 1 3/4 hours.

This recipe yields 6 to 8 servings.
