Instructions: Preheat oven to 350 .
Wash and drain scallops. Bring wine to a boil in a saucepan, add scallops, cover, and simmer for 8 to 10 minutes or until scallops are opaque through (cut one to test). Lift out scallops and cut in large slices (reserve broth for fish soup!). Arrange scallops in 4 scallop baking shells or individual casseroles. Spoon 2 tablespoons over top of each filled shell. Sprinkle 1 1/2 teaspoons par- sley over each, then sprinkle with paprika. To serve heat in the preheated oven for 5 minutes. Makes 4 servings. Email this Recipe:
