1 cup yellow cornmeal
1/3 cup granulated sugar
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
6 tbl unsalted butter, melted
1 x egg, beaten
Instructions:
Instructions: Preheat oven to 400 F. In a large bowl; sift together the first five ingredients. Mix in the buttermilk, butter, and egg until just moistened.

Gently fold in the blueberries.

Fill greased muffin cups 2/3 full and bake for 20 to 25 minutes. Let cool on a wire rack. Serve.

YIELD: 12 MUFFINS
