Instructions: 1. Preheat oven to 375. In a medium bowl, stir together corn meal, boiling water, and oil. Cover and let sit while preparing the rest of the ingredients.
2. In a food processor, combine eggs, cottage cheese, cumin, oregano, and chili powder. Process until smooth. Season to taste with salt and pepper. 3. Pan spray a shallow 2-quart baking dish and press corn meal mixture evenly over the bottom and sides. Sprinkle scallions, bell pepper, and corn over the corn meal, and gently pour in the egg-cheese mixture. Garnish with cilantro, if desired. Bake for 45 minutes, or until set and beginning to brown.
