1/2 cup yellow cornmeal
1/2 cup oat bran
1/2 cup skim milk
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 x egg white
1 tsp baking powder
1/8 tsp ground allspice
Instructions:
Instructions: Preheat the oven to 350F degrees.

Blend all ingredients and pour into a small (8 X 4-inch) nonstick loaf pan.

Bake for 35 minutes, or until a knife inserted in the center of the bread comes clean.

NOTE: The oat bran makes this a most healthful and enjoyable accompaniment to any meal.

VARIATIONS:
*Using l/2 cup fresh corn kernels in place of the onion and bell pepper is a tasty alternative.
*The addition of 1/4 teaspoon cayenne will add a nice bit of spice to this bread.
