dressing:
2 x scallions cut into small pieces
1 tbl hot sweet mustard
1/2 tsp fresh thyme or 1/4 teaspoon dried thyme
2 tbl champagne vinegar
6 tbl grapeseed oil a other light oil
2 cup fresh corn kernels (about 4 ears) 8 red radishes chopped
4 cup minced fresh flat leaf parsley
Instructions:
Instructions: Combine dressing ingredients in a food processor or blender and process until smooth.

Cook corn in salted boiling water for 3 minutes.

Drain and let cool.

In a large bowl combine corn radish and parsley.

Toss with dressing.

Add salt and pepper.

This parsley based salad balances the sweetness of fat corn kernels with the bright attention getting tingle of radishes.
