Instructions: Makes 6 servings. LACTO
In large pot over medium heat, simmer onion, carrot and garlic in butter, with a little water, covered, until onion is translucent, about 3 to 4 minutes. Add thyme, bay leaf and tofu or liquid smoke and simmer, uncovered, for 3 or 4 minutes. Add corn; cook 1 minute. Pour in stock, add salt and bring soup to a boil. Shut off heat. Cover and let stand for 3 minutes. Remove thyme, bay leaf and tofu; puree soup in blender for 3 minutes. Strain through medium-mesh sieve into pot. Add half-and-half; reheat soup to just below a boil. Serve garnished with a spoonful of salsa. Makes 6 servings. Email this Recipe:
