2 cup (masa harina) corn flour
Instructions:
Instructions: Mix the corn flour and water to make a soft dough, then heat a griddle over medium high flame. Divide dough into 12 sections and roll into even balls. Flatten balls slightly Put each piece between two pieces of wax paper or plastic in a tortilla press and flatten carefully to about 3 1/2 inches in diameter. (Watch the edges, if they start to split apart, you should add more water. If it is too difficult to pull the dough away from the paper or plastic the dough may have too much water.) Place the tortillas on the hot griddle until the edges begin to dry slightly. (Dont leave it on too long or the edges will start to curl up.) Flip it over once and let it cook until it gets unevenly brown. The top of the tortilla may begin to puff up but dont encourage this unless you are using the tortilla for stuffing. Flatten it lightly with the spatula and turn it over once more to brown slightly on the first side. Keep the tortilla warm and completely covered while you are making the others.
