1 lrg ripe tomato, peeled
seeded and cut into 1/2-inch dice
1 sprg fresh thyme
2 x fresh sage leaves
2 tbl extra-virgin olive oil, (divided)
2 tbl fresh corn kernels
Instructions:
Instructions: Makes about 1 cup. VEGAN

Preheat oven to 375 degrees. In small baking dish, toss tomato with thyme, sage and 1 tablespoon oil. Roast for 20 minutes, stirring occasionally. Remove from oven, allow to cool and remove herbs. Toss tomatoes with remaining oil, corn, salt and pepper. Serve as a garnish for Corn Soup (p. 51) or with corn chips.

Makes about 1 cup.
