Ingredients:

2 tbl vegetable oil
1 cup diced red onions
2/3 cup diced red bell pepper
2 cup diced zucchini
1 tbl minced jalapeno chile
1/2 oz canned chicken broth (99% FF)
4 cup fresh corn kernels
1/2 cup sour cream
1/3 cup chopped fresh cilantro
1 tbl fresh lime juice
1 tsp salt
1/2 tsp freshly ground pepper
Instructions:
Instructions: 1. Heat oil in 12-inch skillet over medium heat. Add onions; cook 5 minutes. Add bell pepper and zucchini; cook 3 minutes. Add jalapeno and broth; bring to boil. Add corn; cook 5 minutes.

2. Remove skillet from heat; stir in sour cream, cilantro, lime juice, salt and pepper. Toss sauce with hot pasta in serving bowl.

NOTES :
This recipes chunky sauce is studded with corn and diced vegetables, so we chose curved cavatelli pasta to catch veggies in every bite.
