Instructions: Roast the dried Anaheim chili peppers in a dry skillet over med-high heat for 4 mins, or until fragrant. Pour boiling water over chilies in a bowl, and let sit for at least 30 mins. Process chilies with 1/2 of the water in a blender.
Heat the oil in a med, nonstick skillet. Add onion, garlic and Jalapeno peppers and saute, stirring frequently until the onion is softened, about 4 mins. Stir in the corn, cilantro, salt, processed chilies and some of the chile water until you achieve a sauce. Add the Land OLakes and lower heat to low. Simmer for about 3 mins. Serve immediately. NOTES : I havent made this for a while but do remember how good it is. Ill have to work it into my menu for the week. Email this Recipe:
