Instructions: Mix 1 cup cornmeal, pepper and salt in a large bowl of an electric mixer fitted with a dough hook. Add boiling water and mix until smooth. Cool to 120 degrees, about 20 minutes. Mix in yeast, sugar, then 1/4 cup hot water and oil. Mix in remaining cornmeal and flour. Mix 5 minutes.
Turn out onto a lightly floured surface and knead a few minutes. Place in an oiled bowl, turning to coat all sides, cover and let rise until doubled in bulk, about 1 - 1 1/2 hours. Grease a 9" pan with oil. Punch down dough, turn out onto a lightly floured surface and knead again for 3 minutes. Place in greased pan and flatten. Cover and let rise until doubled in bulk, about 45 minutes. Preheat oven to 350. Place bread into oven and bake 45 minutes. Email this Recipe:
