1/2 cup yellow cornmeal
1/2 tsp black pepper
1/2 tsp salt
1 cup boiling water
1 pkt active dry yeast
1 tsp sugar
1/4 cup hot water (115-120 degrees)
3 tsp olive oil
Instructions:
Instructions: Mix 1 cup cornmeal, pepper and salt in a large bowl of an electric mixer fitted with a dough hook. Add boiling water and mix until smooth. Cool to 120 degrees, about 20 minutes. Mix in yeast, sugar, then 1/4 cup hot water and oil. Mix in remaining cornmeal and flour. Mix 5 minutes.

Turn out onto a lightly floured surface and knead a few minutes. Place in an oiled bowl, turning to coat all sides, cover and let rise until doubled in bulk, about 1 - 1 1/2 hours.

Grease a 9" pan with oil. Punch down dough, turn out onto a lightly floured surface and knead again for 3 minutes. Place in greased pan and flatten. Cover and let rise until doubled in bulk, about 45 minutes.

Preheat oven to 350. Place bread into oven and bake 45 minutes.
