Instructions: Mom (Fabfood, May 1998): I make a simple corned beef hash from my leftover corned beef dinner, (I always throw in about 4 - 6 extra potatoes for the hash).

While the potatoes are still warm, mash them with some of the corned beef liquid. Chop a large onion and saute in a slight amount of oil until soft and slightly golden. Chop up some of the extra cooked corned beef. Combine the onion, corned beef and mashed potatoes. Add l teaspoon of Morton Nature Seasonings. Mix well to blend all ingredients. Form mixture into patties. When ready to serve; fry patties in frying pan with small amount of oil until browned.

You can adjust any of the ingredients for what you have left over, or how much you want to make. I make the hash before I put the leftovers away. You can freeze the patties for future use.

Mom (Fabfood, March 1998) Another think I do with Corned Beef leftovers is make Split Pea Soup. I dont really have a written recipe for it but what you can do is use you favorite Split Pea Soup recipe and substitute the corned beef cooking liquid for most of the water. Dont add any additional salt, but pepper is okay. I also throw in any leftover potatoes and carrots. I start cooking the soup as soon as Ive taken the meat and veg out of the pot, by bedtime it is ready to put in a plastic container and refrigerate.

When I cook a corned beef I usually make the hash and soup after dinner then I dont have to do any major cooking for a few days. The soup freezes great. Havent try freezing the hash, as usually have plenty of takers who want some to take home.
