Ingredients:

4 x Cornish game hen
salt
pepper
oil, vegetable
3/4 cup sauce, soy
1/4 cup honey
1 tbl ginger, fresh, grated
2 clv garlic, mashed
Instructions:
Instructions: Season hens with salt and pepper; rub on a little oil and roast in 400F oven for 15 mins. Heat together remaining ingredients. Remove hens from oven and baste with the sauce. Lower the temperature to 350F return hens and continue roasting until tender, about 1 hour, basting occasionally with the sauce. Split each hen in half and serve 1 half

Tracys Notes: Made these 1/15/03 Served with Cashew Pilaf and fresh steamed spinach. Excellent. They do tend to get too dark; I had to cover them with aluminum foil to keep them from burning. Nice flavor and pretty mahogany color though. Very juicy and tender.

Subbed 1 tsp ground dried ginger for the ginger root I didnt have.
