1 x Cornish game hen, thawed
Salt and pepper
1/4 cup apricot brandy
1/2 cup dried cranberries
1/4 cup balsamic vinegar
1/2 cup honey
1 tbl butter
Instructions:
Instructions: Wash hen and with a large, sharp chefs knife, cut through breastbone and open bird fully. Turn bird over and cut through back to split hen into two pieces. Wash bird, season with salt and pepper.

Place hen pieces in a baking pan large enough to hold pieces in one layer.

Bake at 325 degrees until cooked through and skin is browned, 45 minutes. Remove from oven, cover with foil and set aside.

In a medium saute pan over medium heat, warm brandy and cranberries.

Carefully light a match and flame brandy. When flame subsides, add balsamic vinegar and honey and cook, stirring, until thickened. Serve over hens.
