Spicy Pecan-Cornbread Stuffing (see recipe)
8 x Cornish hens - (1 to 1 1/2 lbs ea) (1- to 1 1/2-pound)
Instructions:
Instructions: Spoon about 1 cup Spicy Pecan-Cornbread Stuffing into each hen; close opening with skewers. Place hens, breast-side up, in a roasting pan. Brush with butter.

Bake, covered, at 450 degrees for 5 minutes. Reduce heat to 350 degrees, and bake 50 more minutes or until a meat thermometer inserted in stuffing registers 165 degrees. Remove skewers, and serve.

This recipe yields 8 servings.
