1/2 cup sifted all-purpose flour
3/4 cup yellow cornmeal
2 tsp baking powder
1 tsp baking soda
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
3/4 cup milk (skim, low-fat, soy or rice)
1/4 cup apple juice or cider
1/3 cup honey
1/3 cup vegetable oil
2 x eggs
3/4 cup grated cheddar cheese
Instructions:
Instructions: Heat oven to 400 degrees. Grease 12 large or 18 small muffin cups. In a large bowl, stir together flour, cornmeal, baking powder, baking soda, cinnamon and nutmeg. In a small bowl, mix together milk and apple juice. Beat in honey, oil and eggs. Make a well in center of dry ingredients. Pour in liquids and cheese.

Stir to barely combine batter.

Peel, core and finely dice apple. Stir into other ingredients until batter is just lumpy, not smooth. Fill each muffin cup about two-thirds full. Bake 25 minutes, or until a skewer inserted into center of a muffin comes out clean.

Remove from muffin cups immediately and cool on wire rack or serve hot.
