Instructions: Pre-heat oven to 375 degrees. Spray a 9-by-4 1/2-by-2 3/4 inch loaf pan with cooking spray and set aside. In a medium mixing bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, cinnamon and salt. In a second medium bowl, whisk together buttermilk, eggs and melted butter. Stir buttermilk mixture into the dry ingredients. Stir pears and raisins into batter until just combined.
Fill prepared pan with batter. Place in oven and bake until a wooden skewer inserted into center of the loaf comes out clean, about 45 to 50 minutes. Remove pan from oven and let cool for 10 minutes on a wire rack. Then remove loaf from pan and let it cool on rack. Email this Recipe:
