Instructions: Trim and discard the outer leaves of the lettuce.
Rinse the remaining leaves and dry them well. Place 4 leaves on top of each other roll them together lengthwise and cut the roll across in thin slices like a chiffonnade. Place the shreds in a bowl. Chop the rocket leaves coarsely and add this to the lettuce together with the spring onions and cucumber. Beat the oil and lemon juice together lightly pour this dressing over the salad and toss gently to coat everything in it. Sprinkle the dill over the salad followed by a little salt and toss a little more to mix in. This is the salad that I always return to when I am longingfor a pure and refreshing taste.Try to use the inner young leaves of the lettuce only which taste sweeter. Serves 4 Email this Recipe:
