16 slc pumpernickel
8 slc baby Swiss cheese
1 lb thinly-sliced Smithfield ham
----------------- BOURBON MUSTARD ----------------
3/4 cup Creole mustard
2 tbl Steen"s cane syrup
1 tbl honey
2 tbl bourbon
----------------- APPLE SLAW ----------------
2 cup thinly-sliced cabbage
1/2 x red onion thinly sliced
1 x apple cored, seeded,
and julienned
1 tbl chopped pickled jalapeno
1/4 cup golden raisins
1/4 cup toasted slivered almonds
1 tbl chopped mint
1 tbl honey
1/2 cup mayonnaise
Salt to taste
Instructions:
Instructions: Spread 8 slices of the bread with the bourbon mustard. Next place a slice of cheese followed by 2 ounces of the shaved ham. Finish the sandwich with 1/4 cup of the slaw and another slice of the bread.

For the Bourbon Mustard: Combine all ingredients in a small mixing bowl and mix well.

For the Apple Slaw: In a medium mixing bowl, combine all of the ingredients except the salt and white pepper. Mix thoroughly and season with salt and white pepper.

This recipe yields 8 servings.
