1/2 lb lean pork loin ground
1/2 lb ground turkey breast
1 tsp sage
1 tsp sugar
1 tsp dry mustard
1 tsp onion powder
1 tsp freshly-ground black pepper
1/2 tsp red pepper flakes (optional)
Instructions:
Instructions: Ask the butcher to grind the pork and turkey to the consistency you like - dont grind too fine.

Mix all ingredients together (except non-stick spray). Shape into 12 patties. Spray skillet with non-stick spray. Fry over medium heat, covered to reserve moisture.

This recipe yields 12 patties for 6 servings.

Comments: You can vary the flavor by switching the herbs and spices. For a "softer" flavor, try 1 teaspoon rosemary (omit sage and peppers). For an Italian flavor, try 1 teaspoon of basil and 1/2 teaspoon of fennel (omit sage and red pepper).
