Instructions: In a large skillet, heat the oil over medium heat and brown the chicken for 10 minutes per side. Add the onion and saute for about 2 minutes; drain off any excess liquid. In a medium-sized bowl, combine the remaining ingredients and add to the chicken. Reduce the heat to low and simmer for 20 minutes, until the chicken is tender and cooked through.
NOTE: You can use any type of white beans here in place of the cannellini beans...you know, pinto beans, garbanzo beans (chick peas), or black-eyed peas. Email this Recipe:
