Instructions: Beat eggs lightly in a large bowl. Stir in oil, sugar, courgette and vanilla. Courgette should be grated and well drained. Sift flour, baking powder, soda, cinnamon, and slat on wax paper. Sift into egg mixture until well blended. Stir in raisins and nuts. Spoon batter into 8x5x3 inch loaf pans. Bake at 375F for one hour. Cool 10 minutes. Then remove and cool completely.
