Instructions: Cream margarine and sugar or honey; beat in egg. Add dry ingredients and mix well. Stir in courgette, raisins, and nuts. Chill dough and drop teaspoonfuls onto greased cookie sheet. Bake 12 minutes at 350 degrees.

Makes approximately 5 dozen small cookies.
