Recipe for Courgette Corn Casserole

3 x	Courgette, sliced 1/4" thick, up To 4
1 x	Onion, sliced
2 cup	Frozen Corn Kernels

Instructions:

Instructions: Place 1/2 cup water in a large pot. Add onion and saute briefly. Add courgette, stir a few times, then cover and steam about 10 minutes. Remove from heat. Mix in corn kernels and salsa. Turn into a casserole dish, cover and bake at 400 degrees for 30 minutes.
